One of our original chefs, Brendon Vallejo, came up with this and we remember the debate around the name. ‘Can we call it the love cup? Surely not.’ After tasting it, though, nearly everyone agreed that the name worked – this simple breakfast cup of love made us all happy.

¼ cup (40 g) chia seeds
200 ml (7 fl oz) coconut water
½ cup (45 g) desiccated coconut
splash of maple syrup (optional)
2 mangoes, flesh diced
80 g (2¾ oz) Cashew cream
2/3 cup (140 g) mixed berries
80 g (2¾ oz) Activated buckwheat granola
Soak chia seeds overnight in coconut water to make a chia pudding (you can get away with much shorter than this but ideally, soak them for at least an hour). Stir coconut through the pudding and add a splash of maple syrup and a pinch of salt, if so inclined.
To create the love cup, you just need to layer the ingredients so they look beautiful. Spoon pudding into serving glasses, then add the rest of the ingredients in layers starting with the mango, then cashew cream and berries. Finally, scatter granola on top.
